Preparing Dairy Products
1. What are some examples of dairy products?

2. What are some ways in which dairy products are prepared?

Slide 18 - Diapositive

There are numerous examples of dairy products. Milk is a dairy product. Milk usually comes from cows, but we can also get it from goats. There are different types of milk. It can be whole, low-fat, skim, or evaporated. Cream comes from butter fat skimmed off of the top of milk during production. Cheese also comes from milk. There are too many cheeses to name. Cheddar and Swiss are very common, however. Cream cheese is a softened cheese used like butter as a topping or in recipes.
2. Dairy products are prepared in several ways. Preparation depends upon the product, of course. Milk, for instance, is often pasteurized. Then, depending on the needs of consumers, it may be evaporated, thickened to produce cream, or have fat removed from it to produce low-fat or skim milk. Cheese is cultured. This prevents the cheese from spoiling too soon. Some cheeses are also pasteurized. Cream cheese is prepared in this way. However, gourmet cheeses (Gourmet or artisan cheese, on the other hand, only makes use of natural ingredients like high-quality milk, enzymes and natural colours, and the cheese is usually made by hand with more care and extra steps to ensure the finest taste.) are not. They are always cultured.
