Sushi is a Japanese dish. In China, they pickled food to preserve it for longer periods. The Japanese found this clever, and in the 15th century, they started with 'Namanare-zushi': fermenting fish and rice in a barrel under pressure. The result was that the rice acquired a slightly sour taste, and the fish stayed fresh for a month.

In the 17th century, they added vinegar to the rice. This meant the rice no longer had to ferment, and the sushi could be prepared faster.
