Polyvocal. Quite a few first-persons but also third person limited / prologue and interlude are omniscient

Most are first-person dramatic monologues -> giving a personal and intimate voice to women who have traditionally been silent or sidelined

To what effect is the third person omniscient used in relation to Baldini?

Detached commentary -> exposes his mediocrity and hypocrisy / builds satire and irony, he is turned somewhat into a comic figure / Grenouille's brilliance is highlighted in contrast 

Through the omniscient narrator, Baldini is presented not only as an individual but also as a symbol of the old world of perfumery, craftsmanship, and tradition, which is being overtaken by new ideas and talents like Grenouille’s. Baldini’s obsession with rules, procedures, and old-fashioned methods represents the passing of an era.
