1 Red meat is dark meat that comes from mammals. The most common type of red meat is beef, which comes from cattle. From cattle, we get steak and veal. However, lamb and venison (hertenvlees) are also considered red meat. White meat usually comes from poultry. Turkey, chicken, and Cornish hen are considered poultry. Pork is also labeled as white meat. Pork comes from pigs. Examples include ham and bacon.
2. Meat can be prepared in multiple ways. It can be cooked on a stovetop, in an oven, or on a barbecue grill. Beef, poultry, and pork can be grilled or braised  on a stove. Meat can also be braised in the oven. Other ways of cooking meat in an oven include broiling and roasting. Grilling and roasting methods use dry heat to cook meat. 
Braise: To braise something is to cook it slowly with indirect moist heat.
Broil: To broil something is to cook it rapidly with direct dry heat from above. 
roast:To roast something is to cook it slowly with indirect dry heat.
Grill: To grill something is to cook it rapidly with direct dry heat from below.

1. Cows, bulls, or oxen are used for beef; pigs for pork; calves for veal; and the meat of a lamb is simply called lamb.
