Ingredients (part 1)
• 750g (1 1/2lb) white potatoes, unpeeled
• 2 tbsp olive oil
• 1 brown onion
• 1 courgette/zucchini
• 1 large carrot
• 2 celery sticks

• 2 garlic cloves, crushed
• 1 x 500g pack Boswell Farms beef mince
• 2 tbsp plain flour
• 1 beef stock cube
• 2 tbsp Worcestershire sauce
• 25g (1oz) butter, melted
• buttered greens, to serve (optional)

This hearty family favourite is the ultimate comforting main, featuring rich beef mince, gorgeous root veggies and a crispy grated potato topping.

Step 1: Put the potatoes in a large pan of water. Bring to the boil, and then parboil for 15 minutes. Drain well. Loosely wrap in a clean tea towel to dry and cool a little. When the potatoes are cool enough to handle, peel the skins and coarsely grate into a bowl.

Step 2: Meanwhile, heat some oil in a large frying pan. Chop all the veg and add to the pan along with the oregano and garlic. Gently cook for 10-15 minutes, until softened. Remove to a bowl until needed. Return the pan to the heat and add the mince. Brown, over a high heat, breaking it up with a wooden spoon. Stir in the flour and cook for 2 minutes more.

Step 3: Tip the cooked veg back into the pan and add the stock cube, Worcestershire sauce and 500ml of water. Bring to the boil, then reduce the heat and simmer for 40 mins. Season to taste.


Step 4: Put the mince mixture in a large baking dish. Scatter over the potato, brush with the butter and season. Bake for 25 minutes, until bubbling and golden. Serve with buttered greens, if you like.

Ingredients
 2 eggplant (2 lb./900 g), cut into 1/2-inch-thick slices
 115 g Italian sausage
 3/4 cup chopped fresh parsley
 1/2 cup dry bread crumbs
 1 egg
 1/4 tsp. ground black pepper
 1 jar (650 mL) Classico di Napoli Tomato & Basil Pasta Sauce,
      divided
 60 g provolone cheese, cut into thin slices
 1 cup Cracker Barrel Shredded Mozzarella Cheese

What a clumsy cook...he has messed up the directions of the following recipe for a savoury eggplant casserole  

Ingredients
 2 eggplant (2 lb./900 g), cut into 1/2-inch-thick slices
 115 g Italian sausage
 3/4 cup chopped fresh parsley
 1/2 cup dry bread crumbs
 1 egg
 1/4 tsp. ground black pepper
 1 jar (650 mL) Classico di Napoli Tomato & Basil Pasta sauce
 60 g provolone cheese, cut into thin slices
 1 cup Cracker Barrel Shredded Mozzarella Cheese

Heat oven to 375ºF.
Bake 30 to 35 min. or heated through. Sprinkle with mozzarella;
bake 10 min. or until melted. Let stand 5 min. before cutting to serve.

Remove and discard casing from sausage; crumble sausage into
large skillet. Cook on medium heat 10 min. or until evenly browned,
stirring occasionally; drain. Mix with parsley, bread crumbs, egg and pepper until blended.

Cook eggplant in boiling water in large saucepan 2 min.; drain.
Spread 1/2 cup pasta sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with half the eggplant. Cover with
layers of sausage mixture, provolone and half of the remaining pasta sauce. Top with remaining eggplant and pasta sauce; cover.

What recipe is this?


In a large bowl, whisk flour, sugar, baking powder and salt.
Add milk, butter and egg; stir until flour is wet.
Heat 12-inch skillet over medium heat until a drop of water sizzles.
Brush the skillet lightly with oil.
In batches, scoop batter into the skillet.
Cook 2 to 3 minutes or until bubbly and the edges are dry.
With a spatula, turn.
Cook 2 minutes more or until golden.
Put it on a plate or keep warm in 225°F oven.
Repeat with remaining batter, brush the skillet with more oil if necessary.
